There were two candies made every year for Christmas by my parents while I was young. The first one, Date Loaf, was my favorite and I continue to make it every year. It also has been passed down to my son and a couple of years ago, our grandson made his first batch. So feel free to indulge this upcoming holiday season but watch your blood sugar count.
Date Loaf Candy
- Ingredients

- 2 cups Sugar
- 1 Tablespoon, unsalted butter
- 1 cup whole Milk
- 1 cup chopped Pecans
- 1 cup Coconut, unsweetened
- 8 ounces Dates, cut into small pieces
- 1 teaspoon Vanilla
- Directions
Cook sugar, milk and butter to soft ball temperature, 234-240° F. Add dates and stir until discolved.
Remove from heat and beat 3 minutes. Now, work fast, add vanilla, pecans and coconut and mix well.
Pour onto a damp cloth and roll into a loaf. Maybe dusted with powdered sugar before slicing.
Coca Fudge
- Ingredients

- 2 cups Sugar
- 2 -4 Tablespoons Coca
- 1 cup whole Milk
- 2 Tablespoons white Corn syrup
- 1 Tablespoon unsalted Butter
- 1 cup chopped Pecans
- 1 teaspoon Vanilla
- Directions
Mix together sugar and coca. Add milk and corn syrup and stir well. Cook to soft ball temperature, 234-240° F.
Remove from heat and stir in vanilla and butter. Let stand for a few minutes, then beat until creamy and beginning to thicken.
Add pecans and mix thoroughly. Pour onto a buttered platter and, when firm, cut into squares before it hardens
